爭鮮故事從這開始
爭鮮企業前身隸屬1978年所成立的津秋實業,企業創始人陳津秋先生兢兢業業地從成衣外銷起家,為延伸多元經營觸角與創新的業態,1996年以宏觀眼光跨足服務業,成立第一家外帶壽司,同年又成立迴轉壽司,再拓展至業務批發及其他餐飲品牌陸續建立,為轉型最成功之典範。
「爭鮮」與「真鮮」的意義
為了對「新鮮」的堅持,企業自始命名為「爭鮮」,意即「真鮮」。堅持提供最新鮮、最健康、最美味、最安心、最實在並對健康有益的食材。因此「最高級的品質,最平實的價格」是「爭鮮企業」最重要的品牌意義。
新鮮均一價的堅持
爭鮮食材產地直送,65%國外進口、35%國內採購,例如:每週六次挪威產地直送的鮭魚、高雄港、東港超低溫鮪魚等生鮮食材及精選優質米,皆由爭鮮中央廚房層層把關後,物流車隊每天全程低溫配送到全省直營門市。門市嚴格執行食材100%新鮮絕不隔夜銷售,並每週進行安全衛生檢查。我們對每個細節的要求只為了堅持給顧客最好的。
創新與成長
爭鮮企業以日式餐飲為主要發展,業務批發至各大零售通路、線上購物等多元化的發展領域。至2005年台灣全省各地已達100家迴轉壽司直營門市,2006年拓展大陸地區,陸續在上海、蘇州、北京等地展露觸角,2007年台灣地區陸續成立定食8、日式火鍋等平價餐飲品牌,至2009年大陸地區延伸至香港,在亞洲地區超過290家直營門市。

The Sushi Group An Introduction
The beginning of the story
The forerunner of the Sushi Group was originally part of Jin-Chiou Industries 津秋實業 which was established in 1978. Company founder Mr. Chen Jin-Chiou started out in the ready-to-wear clothing export business. In 1996, driven by innovation and a desire to expand business and guided by his business acumen, Mr. Chen diversified into the service sector, setting up his first sushi take out business. That same year, he also founded a revolving sushi restaurant, expanded into the wholesale business, and set up other restaurants. His has been an outstanding example of a business transitioning into other fields.
What it all means
“爭鮮” the Chinese name for “Sushi Express” is a play on words, meaning “vying for freshness” and which sounds like the phrase “truly fresh,” underscoring the company’s insistence on providing the freshest, healthiest, tastiest, safest, and heartiest food possible. The Sushi Group’s brand name, therefore, stands for “quality at affordable prices.”
One price fits all
The ingredients for Sushi Express’ dishes are all delivered directly from their places of origin—65% imported and 35% purchased domestically. For example, carefully selected rice and choice seafood, such as salmon from Norway and tuna at ultra-low temperatures arrive from Kaohsiung and Donggang six times each week with Sushi Express’ central kitchen keeping track at each step. Then, Sushi Express’ fleet of delivery trucks transports the food at low temperatures for the whole way to Sushi Express restaurants island-wide daily. Each shop is required to strictly adhere to the company’s policy of 100% freshness—no food products held overnight to be sold the next day. They also carry out health and sanitation inspections once a week. We are demanding in regard to details, because we want the best for our customers.
Innovation and growth
Primarily Japanese in style, the Sushi Group has expanded and diversified to wholesale business to include major retail channels and online sales. By 2005, Sushi Express had 100 restaurants throughout Taiwan. In 2006, it began to expand to the mainland, opening up sales points in such cities as Shanghai, Suzhou, and Beijing. In 2007, the company established other restaurants that emphasize quality, taste, and affordability, including Teishoku 8 定食8 and Shabu – Shabu 爭鮮日式火鍋. In 2009, the company expanded from mainland China to Hong Kong and now over 290 directly managed restaurants all over Asia.
Our driving passion
In a 2008 survey of Taiwan’s top 500 service companies carried out by Commonwealth Magazine, Sushi Express ranked third for revenue in the tourism and restaurant category. We will continue to provide and create restaurants offering world-class dining experience as we stand by our principles of health, nutrition, and fine food for you our customer.

  • 台灣餐飲事業處成立:
    Food and Beverage Department established.
  • 壽司霸股份有限公司成立,外帶壽司開幕。
    Sushi 8 Co., Ltd. founded. Grand opening of first Sushi Express Takeout Restaurant (located at National Taiwan University).
  • 爭鮮股份有限公司成立,迴轉壽司開幕。
    Sushi Express Co., Ltd. founded. Grand opening of first Sushi Express Restaurant (located on Yongkang Street).
2001
物流事業處「品中品股份有限公司」成立
Toplus Food Processing Co. founded to serve as logistics support.
爭鮮迴轉壽司單價由每盤30、60、90元,調整為均一價每盤30元。
NT$30, 60, and 90 per dish prices replaced with single NT$30 per dish price.
2003
整合壽司霸(股)、品中品(股),成立爭鮮股份有限公司。
Sushi 8 and Toplus integrated into Sushi Express Co., Ltd.
2004
爭鮮迴轉壽司取消10%服務費。
10% service charge waived.
爭鮮迴轉壽司全面取消牛、豬肉等非魚類,供應全海洋系產品。
Pork and beef product sales terminated. Only marine products served.
2005
商場事業處成立,爭鮮美食館開幕。
Mall Service Department founded. Grand opening of Taipei New World Shopping Mall.
爭鮮迴轉壽司達成100家直營門市
Sushi Express Co., Ltd. established 100th branch.
2006
  • 海外事業處成立:
    Dining business expanded overseas.
  • 4月上海第一家迴轉壽司開幕
    Overseas Service Department founded—Grand opening of Wuning branch in Shanghai in April.
爭鮮「業務批發」事業處成立
Sushi Express established wholesale department.
2007
  • 台灣餐飲新品牌成立:
    New brands founded in Taiwan.
